Breakfast:
Oat Porridge
Ingredients:
1 cup Rolled oats 2 cups Almond milk
1 tbsp Chia seeds Blueberries
Bananas Slivered almonds
Procedure:
1. Combine oatmeal and milk into a sauce pan. Simmer for 5-7 minutes over medium heat.
2. Pour mixture into a bowl and top with fruits and chia seeds. Drizzle a dollop of honey on top just before serving.
Lunch:
Turkey Fries
Ingredients:
4 tbsp oil 3 tbsp lemon juice
4 oz turkey breast 4 tsp Dijon mustard
2 eggs 8 oz bread crumbs
Butter lemon wedges
Salt
Procedure:
1. Combine 2 tbsp of oil, lemon juice and a pinch of salt in a shallow dish. Marinate turkey breast for an hour.
2. Drain turkey and lather it with a thin layer of mustard.
3. Beat eggs in a separate bowl.
4. Dip turkey into the egg mixture and cover with breadcrumbs.
5. Melt the butter and remaining oil in a pan and gently fry turkey for 10 minutes on each side.
6. Remove turkey from heat and pat with a paper towel to remove excess oil. Garnish with lemon wedges and serve with brown rice.
Dinner:
Onion Soup with Wine
Ingredients:
3 large onions 2 oz butter
1 tbsp flour ½ tsp brown sugar
2 ½ pints water 2 tbsp dry white wine
2 oz gruyere cheese Salt and pepper
8 slices of French bread
Procedure:
1. Peel and slice onions.
2. Melt half the butter in a large saucepan and cook onions until transparent.
3. Sprinkle onions with flour and stir until the flour is cooked.
4. Add sugar and water. Simmer for 20 minutes.
5. Preheat oven to 450 F (230 C).
6. Fry bread in the remaining butter. Place bread slices in the bottom of individual oven proof bowls.
7. Add wine and seasoning. Transfer mixture into the bowls.
8. Grate cheese and sprinkle it on top of the soup.
9. Bake for 5-10 minutes or until the cheese is melted.
Dessert:
Turmeric and Candied Ginger Dairy Free Ice Cream
Ingredients:
2 inch peeled knob of turmeric ¼ cup grated turmeric
2 cans of coconut milk 1/3 cup candied ginger
1 tbsp arrow root powder ¼ cup grated ginger
2 inch peeled knob of ginger A pinch of sea salt
½ cup maple syrup
Procedure:
1. Make slurry using 1 tbsp arrow root and ¼ cup coconut milk.
2. Simmer remaining coconut milk, grated and knob of turmeric, maple syrup, grated and knob of ginger in a deep saucepan for 20 minutes or until flavors are well infused.
3. Run mixture through a sieve and continue heating. Gradually incorporate the slurry. Once the mixture is smooth, remove from heat and add the candied ginger and sea salt.
4. Transfer it into a container and refrigerate for a few hours.
5. Pour chilled mixture into an ice cream maker.
6. Store in air tight containers.
