The ingredients are:

2 teaspoons of saffron spices

2 tablespoons of brandy

3 cups of peeled and cored pears

3 cups of fresh orange juice

Procedure:

Mix the brown sugar, cinnamon and all the liquid ingredients in a huge bowl.

Position pears facing down in a big baking dish so they would not touch each other.

The ingredients are:

1 quart of water

2 teaspoons of chives

1 tablespoon of sea salt

1 medium size butternut squash

2 pieces of yams

1 tablespoon of black pepper

half cup of chopped ginger

3 cups of red curry

2 cans of unsweetened coconut milk

sliced large onion

2 tablespoons of broth powder

Procedure:

Sauté ginger and onions for about three to five minutes using a large pot.

Once done, add coconut milk and curry paste.

Stir and boil for about three minutes.

Add broth, sea salt, squash and yams and stir for a couple of minutes.

Add water.

Cook all ingredients for thirty to forty minutes or until the vegetables are tender enough.

Simmer all ingredients until it is ready to be served.

Apple and Cranberry Chutney

Ingredients are:

1 teaspoon of nutmeg

1 teaspoon of canola oil

2 teaspoons of cinammon

half cup of brown sugar

half cup of fresh orange juice

2 cups of raisins

5 cups of fresh cranberries

5 cups of sliced or diced fuji apples

2 teaspoons of chopped red onions

Procedure:

Heat canola oil in a huge frying pan.

Sauté onion for about three minutes.

Add zest and orange juice.

Add cranberries.

Once cranberries pop, add the rest of the ingredients.

Stir occasionally until liquid ingredients have evaporated.

Mix for about five to eight minutes.

The best dessert for these meals is mixed vegetables in low fat chocolates. Boiled corn kernels, green peas and chopped carrots mixed with low fat chocolate just needs to be refrigerated for one hour then it is ready to be served.
